Gingerbread Layer Cake with Cream Cheese Frosting - The Foodie Days of Christmas

This tender gingerbread layer cake has just the right amount of spice. The dark, rich molasses and ginger flavors are perfectly balanced with the luscious cream cheese frosting. At this time of year is there really any such thing as too much gingerbread? Whether you're into cookies or cake, tis the season to bake!

Gingerbread Cake with Cream Cheese Frosting ~ serves 8-12
Adapted from Sweet Kat's Kitchen
3 cups AP flour
1 teaspoon baking powder
1 cup molasses
1 cup heavy cream
3/4 cup packed dark brown sugar
3/4 cup unsalted butter
3 eggs
1/2 cup sour cream
4 teaspoons ground ginger
1.5 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt

Cream Cheese Frosting
12 oz cream cheese, very soft
1 cup unsalted butter, softened
5 cups sifted confectioners sugar
1 teaspoon vanilla
1 tablespoon orange liqueur
1 teaspoon ground ginger
1 teaspoon cinnamon
1/2 cup orange marmalade ~ optional

Chocolate-Pumpkin Trifle, Gingerbread Cake, Apple Tart
Preheat oven to 350ยบ F. Prep two 9" cake pans with baker's spray or butter and flour.

In a large mixing bowl beat together the dark brown sugar and butter until fluffy. Add eggs, molasses, sour cream and heavy cream. Combine well. Sift in remaining dry ingredients and combine well.

Divide evenly between the two prepared pans and bake for 25 minutes; or until tester comes out clean. Let cool completely before icing cake.

To prepare icing combine softened cream cheese and butter in a large mixing bowl. Whip until fluffy and well combined. Add flavoring and spices. Sift in confectioners sugar one cup at a time. If frosting is too warm let chill in fridge for 10+ minutes before icing cake.  If using orange marmalade heat it up for a few seconds in the microwave and brush over tops of the two cakes before icing. Frost cake as normal. Decorate top of cake with candied ginger or candied orange peel if desired. Best served same day - after all... everyone loves cake!

  11. Came out dense and did not rise enough. You shouldn't have changed baking soda to baking powder. Baking soda would also have helped cut down on the acidity of the molasses.
